Wife wants a corn cassarole for thanksgiving... She remembers one from her aunt when she was a kid that she liked.... had both kernel and creamed corn, and CORN FLAKES

Anybody?

Haven't tried one with corn flakes, but I really like this one.


JIFFY CORN PUDDING

1 can whole kernel corn, drained
1 can cream corn
1 stick butter
1 (8 oz.) pkg. sour cream
1 box Jiffy corn bread mix

Melt butter in dish. Put in corn and cream. Mix together well. Sprinkle corn bread mix over corn and stir all together. Bake 45 minutes at 350 degrees

Creamy Corn Casserole

4 tablespoons butter
1/2 cup all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1 cup milk
1 can (15 ounces) cream-style corn
1 can (15 ounces) whole kernel corn, or about 2 cups frozen corn, thawed
3 eggs, separated
3/4 cup corn flake crumbs or buttered bread crumbs.
Heat oven to 350°.
Melt butter in a saucepan over medium-low heat; add flour, stirring until mixture is well blended. Gradually stir in the milk; add sugar and salt. Cook, whisking constantly, until smooth and thickened. Mixture will be thick. Remove from heat and stir in cream-style and kernel corn. Lightly beat egg yolks, and then add to the corn mixture. In a grease-free bowl, beat egg whites until stiff peaks form. Fold egg whites into the mixture. Transfer to a 2-quart buttered casserole. Set the casserole in a larger pan and put in the oven. Add hot water to the large pan to a depth of about 1 inch. Bake for about 45 minutes. During last 10 minutes of baking, evenly cover top of casserole with crumbs.
Serves 6.

i go about the same route. been making it since my kid bro was in South Bend and someone's mom made it for dinner...made into our family traditions and still going strong.

Made it to spec... I'll probably cut back on the milk next time... kinda soupy. Haven't tried it yet, waiting for the wife to get home.... 2 Ribeyes, the cassarole.... Need a cold beer to go with... Thanks, Predator Chick!

Your Welcome, let us know how it tastes, maybe it just needed to set for a few minutes looks good though! Your wife has a good man, I have more training to with mine, he can cook frozen pizza now. woo hoo. laughl.gif

damn - she should! She's been training me for 30+ years now!

It set up a bit after it cooled a little... But it was pretty tasty. I think next time, I'll add some pepper, substitute garlic salt for plain salt, and use seasoned bread crumbs instead of corn flakes... it REALLY needed some spicing up!

I add a small amount of cayenne pepper to my cream corn and it is always a hit at Thanksgiving.
