Mama Leila's Oven Baked Possum

After you kill the possum be careful not to let him get away.

While you're talking and planning how you are going to eat him, he's going to be slipping right from under your nose.

All he was doing was playing possum.

Skin him and clean him before you go another foot, then the mess is gone and he won't get away.

When you get him home, rub him all over with salt and pepper. Then rub all over with a mixture of vinegar and brown sugar.

Wrap up the possum in foil, pop in a baking pan and leave in the refrigerator over night.

The next morning, put the pan with the possum in it, (hopefully) on the stove top.

Add 3 tablespoons of bacon fat and sear him on all sides

Add two chopped onions, and in the oven he goes. One hour at 350.

Pull him out, roll him over and surround him with sweet potatoes, back in the oven 1 1/2 hours or until tender.

Possum is tender and mild regardless what others may say.

You got to watch him or he will slip away.

I'm still waiting (quite patiently I might add) for my cookbook of wrench wench recipes. I have asked Santa to bring it for Christmas this year. wub.gif

Nah, first you gotta get out of your turck, then see if its viable roadkill, make sure you check for loose asfault, makes it too crunchy. . .

Actually, I've been typing mine all in to Word, getting ready for printing once I'm done. Lots of my old recipes are on recipe cards, I'm slowly plugging away at those. I'd be happy to compile something....

TheWrenchWench
Since I haven't shared any of these with anyone yet (BAD NICOLE!) I decided to transfer all my recipes to Google Docs. I'm about 1/2 done and will post a link by Christmas so you all can view them.
TheWrenchWench
Hmmm, I might have to create a google site instead. smile.gif
