We made a 5 pound ribeye roast for Easter. On sale at Albertson's for $17 Made up some of those roasted brussel sprouts and a batch of homemade mashed potatoes.

We have a TON of meat left over It was just my aunt, Jimmy, and myself for dinner.

Leftovers last night. THIN sliced the leftover meat and simmered it in the leftover au jus. Put it on some nice fresh French rolls with some carmalized sweet onions and swiss cheese. Add some spicy hot horseradish sauce and YUMMMMMMM

Here is one out at Glamis in the MH. 1/2 Ribeye (rare) and stuffed salmon, vegies w/cheese, garlic bread and Coors light!

The wife made spaghetti with spaghetti squash as the noodles.. Yummy

So it tastes good w/the squash? I've seen this sort of recipe dozens of times, but haven't ever heard from someone who's tried it. Do tell~ how's the texture, taste, comparison to spaghetti noodles, etc.

The other day was Thresher shark, basmati rice and baby greens salad. With a Hef of course.

sorry no pics...but I had chili spaghetti for dinner tonight.

Last night I made short ribs w/ a Caribbean inspired rub cooked in a crock pot. Damn they were good. No pics as crock pot food just isn't pretty.

tonight is carne asada. gonna be the 7th night I have cooked for myself since I have been out here in Indio working. (brought the 5er), shouldnt tell wifey or she will never make me dinner again...lol
