Bricks, as many as sandwiches you'll be making or can fit on your grill, wrapped in foil
Good sandwich bread~ Costco sells a shepherds bread that carries the flavors well and doesn't fall apart
Meat of your choice, I used sliced grilled chicken breast this time
Sliced cheese of your choice, I used 3 alarm cheddar cheese~ it has chipotle, jalapenos and habaneros facelick.gif
Veggies~ I used basil leaves, red onion, tomatoes, and avocado this time. Whatever your imagination thinks would be good
Butter

Lightly butter the outsides of the bread and assemble as you would a regular grilled cheese. Place on a grill and top with a brick. Grill for 5 minutes or so depending on the heat of your grill. Remove the brick, flip the sandwich and top with the brick again, cooking for another 5 minutes.

Those look really good. I'm going with grilled eggplant, peppers/onions and cream cheese tonight. Probably some basil too . . .

That sounds like a great combo. What about brie instead of cream cheese? I'd definitely add basil. facelick.gif
