Full Version: Anyone Have A Delish Creamed Spinach Recipes ?

Well I have searched the internet, and this one looks good and easy, but thought I'd check here to see if anyone has any YUMMY recipes before I commit to this one. smile.gif

1 box frozen chopped spinach

Cook spinach as directed and drain. Set aside.

CREAM SAUCE:

1/2 stick butter
1/2 c. flour
Pinch of salt

Melt butter, add flour and salt to make the roux. Add milk and stir until medium thickness. Stir in 2 tbsp. of sugar. Add drained spinach.

I was thinking of adding nutmeg, a lil garlic, and fine grated onion (cook these in the roux to bring out flavor) and then bake w/ bread crumbs and parm cheese on top in the oven til the top is browned.

Any other recipes? This is the 1st time I am making it and want it to be YUMMY! icon_biggrin.gif

Here is the other one I found that had a lot of great reviews:

3 tbsp. butter
4 tbsp. flour
1 1/4 tsp. salt
1 c. whole milk
1/2 c. sour cream - can be low-fat
2 tbsp. butter
2 tbsp. onion, minced
1/4 c. water
20 oz. frozen spinach, chopped
1/4 c. Parmesan cheese

Melt 3 Tbsp. butter in a small saucepan on Med-Low heat. Stir in flour and salt until creamed together. Stir in milk a little at a time. Increase the heat to Medium. Constantly stir with a whisk until mixture is thick and smooth.

Remove from heat and set aside.

Melt 2 Tbsp. butter in a 2 quart saucepan over Medium heat, add onions and cook until transparent. Add spinach and water to pan, lower the heat and cover. Stir several times until spinach is almost completely cooked.

When spinach is almost done, add white sauce, sour cream and Parmesan cheese. Stir well and simmer until completely blended.

Then I thought I'd brown it under the broiler.

Here is the one we use. It's the recipe from Lawerys Prime Rib in Beverly Hills. It's sooooo good. It's simular to he others but this has bacon. ENJOY!



Creamed Spinach a la Lawry's

2 pkgs. (10 oz. each) frozen chopped spinach, thawed
4 slices bacon
1 small onion, minced
2 cloves garlic, minced
2 tablespoons flour
1 teaspoon Lawry's Seasoned Salt
1/2 teaspoon freshly ground black pepper, or to taste
2 cups milk


Drain spinach well and squeeze out excess moisture with hands; chop finely and set aside. Fry bacon in heavy skillet until crisp; remove, drain and chop. Sauté onion and garlic in bacon drippings; add flour, Seasoned Salt and pepper and blend thoroughly. Slowly add milk, stirring constantly until thickened. Add spinach and bacon; heat.

Makes 4 to 6 servings.

More simply:
Make the spinach,drain well
Put in a pan with 2 tablespoons of olive oil,2 TBS Minced garlic,Crushed bacon strips.
Sautee til garlic is browned

YUMMY! Just don't go too far away from a glass of water after eating.

Creamed Spinach Au Gratin


1 lb. frozen spinach, thawed
12 oz whipping cream
1 ˝ Tbsp melted butter
1 ˝ Tbsp flour
˝ tsp. salt
2 Tbsp. sugar
Pinch white pepper
2 Tbsp parmesan cheese


Combine spinach, cream, salt, sugar, and white pepper in a pot and bring to a boil. Simmer 5 minutes. Make a roux from the butter and flour. Add to spinach, mix well, and remove from heat.

Transfer to a casserole dish. Sprinkle with Parmesan cheese and brown under broiler.
