You may have seen the thread awhile back on the stuffed pork chops I made. Well I liked them so much that I decided to "stuff the chicken" tonight.

I've had four big breasteses marinating in Lawery's Tequila Lime marinade for two days.

Cut a pocket into them and filled with a stuffing made of Artichoke hearts, Waterchestnuts, diced red Onion, Pecans, shredded Cheese, & fresh Garlic, all mixed up with an egg.

Some lime juice squeezed over the top & baked @ 375º for about 35 minutes.

Served it up with some wild rice and steamed veggies - Cauliflower, Carrots, and Sugar Peas. NOM, NOM, NOM.

Pretty sure baby will be givin' me some "dessert" after American Idol. sraptor.gif

I think having stuff cooking inside the meat really helps keep it from drying out. These turned out reeeeeally moist and tender.
