Full Version: Brisket Recipe

So I was out grocery shopping and there it was....a gloriously large chunk of beef laughing.gif So I bought it without really knowing what to do with it. I did call my dad who gave me his recipe. I don't have a smoker - but I can't imagine how delicious it would be, makes my mouth water thinking about that. I think I may invest in one.

So here's what I did with the grill.

Dry rub - equal parts cayenne and ground pepper sprinkle onion, garlic and cumin powder in.

Grill - My grill only has 2 sections, my dad says its best if you have 3. You are supposed to put 2 of the sections on low flame, and leave the middle one with no flame. Place the brisket over the no flame section. Plan about an hour for every pound. Don't forget to flip. Then when it reaches 180 degrees wrap in foil, turn all burners off and leave in grill for another hour. With me having only 2 sections I just had to rotate as well as flip in order to get all sides near the flame to cook evenly.

I threw it on a hoagie, with some home-made slaw and it was yummy!

I have a smoker and once you do it that way you'll never want to do it another. I put grub rub on mine (www.grubrub.com) and let it sit for a little while, getting up to room temp before putting it on the smoker. I have various woods that I use, apple, mesquite, oak, and pecan. I put a small aluminum tray with water in it in the cooking area to provide moist smoke. I get the smoker up to temp and put the meat in as far away from the firebox as possible. A big brisket, I may smoke for 8 hours, a small one, maybe 4 hours. About half way through the cooking time I will wrap it up in foil. It will collect the juices and start getting more tender. I'll see if I can load some cell phone pic's I took. I got the smoker at Lowe's.

This one is simple but very tasty! Take your brisket and trim some of the fat off of one side of it, get a large roasting pan or deep baking pan, put the brisket in the pan, add one bottle of your favorite BBQ sauce, one bottle of your favorite (light colored beer)beer, 3 chopped onions. Cover the pan with foil real tight and bake on 250 for 4 hours. BOOM your done.

^^^ I do it this way too.

If you don't have a smoker use your oven, I've done them both ways...... Do not use a trimmed brisket or trim anything off. You can do that later when its finished cooking. I just use salt,pepper, and lots of garlic and little liquid smoke. Seal it up in a roasting pan and bake for 4-5 hrs on 275-300 depending on size. Once done pull the cover off and crank up the oven to brown. Then slice it up (against the grain).....
