Two much different animals for sure. Coilovers are a little more time consuming to tune, but have a much more linear spring rate. Airshocks are lighter, less expensive(unless you buy a nitrogen tank) but have a spring rate that ramps up very quickly in the last few inches(good for a bumpstop). They heat up quite a bit faster too due to the smaller amount of oil they carry. For lightweight cars they are sufficient. Airshocks are very easy to tune with the addition or subtraction of oil and only takes a few minutes.
Both have their benefits for sure, but my next car will have airshock coilovers so I can take advantage of the bumpstop and tuneability and a bypass right next to it for the rest
