2" Ribeye cooked in the oven at 350 for 10 mins, then slam it on to a red hot cast iron pan just to sear with butter and rosemary\

I throw whatever meat in for the week on Sunday , then finish when it's time to eat. It really doesn't take much planning  🙂

Or can be started in the morning and finished when home from work - sort of like a crock pot but way better!

I’ve also been dry brining lately with steaks and tri tip. Kosher salt them bad boys for at least 15-20 minutes before cooking. Tenderizes and adds good flavor throughout the meat.

Ahh ok, that's how I make omelets. Super convenient,  and easy clean up.

Correct me if i am wrong, but isn't a reverse sear when you sear first, then cook it?

Nope, you're going to cook it to temp (or close to it) FIRST, then hit it with high heat to sear it.

If you are cooking over coals try a Caveman sear! Can't do that with a pellet rig.

After it comes up to temp (or close) pull the grate, knock the ash off the coals a bit then put the meat directly on the coals for 30-45 seconds, flip it, do this twice for a great sear.
