Was craving porterhouse.Costco didnt have any. Picked up some filets. Wife is pregnant so went a little higher in temp. Smoked on mesquite at 225 for 45 minutes then seared at 500 til done. Holy ****in ****. One of the best filets I've had. Rivals Ruth's Chris. Also threw some butter slices on the tops while smoking.

Really good with the sauce on it. 

Mayonnaise, Sriracha, Soy Sauce or Ponzu, crushed ginger, galic, hot sesame oil.

Great on all fish and sushi. Chicken, steak, whatever.  The owner of a boat named the Tunanator taught me that sauce recipe. Nicest boat I ever fished on and cool dude.

Take care of those that take care of you! Big thanks to Fullerton Sand Sports! They dismounted/cut & buffed and remounted a bunch of tires for me. Always treat me well so I bbq'd for them. Tritip, chicken wings, onion jam, Shishito peppers and some mac salad (bought that), butter rolls all made for a good lunch for the FSS crew. Thank you again!!!

If you're not up to going out and catching your own, Sprouts sells frozen, vacuum sealed yellowfin steaks that are very good. About $20 for six steaks.

Don't usually pop for filet mignon but these looked good. Costco prime, 4 pieces in the pack for $32. Figured that's 2 meals with the protein at $16 a meal. Added some onions, asparagus and fingerling potatoes, bottle of Cab. Figure I have $35 in the meal total. Grilled everything on the BGE. Potatoes were in a cast iron pan. Onions wrapped in foil. Asparagus on a stainless veggie tray.

Next up! These 2 fat pork chops were 2+'' thick and only $4 at Sam's! Had to buy them and give them a try. 24 hours in a simple brine of water, salt, pepper corns and herbs. 275* indirect with the ceramic plate setter in the BGE till the IT was 140*. Pulled the plat setter and let the heat come up and finished to 145* IT. Let them sit for 5 or so min then served.

Smoked some burnt ends yesterday. This is a favorite of mine and I’ve only ever done it on chuck roast. Gonna get my hands on a brisket point to see if they’re better.

Looks good! Have you check Costco? The one by me sells flats separate so you dont have to buy a whole.

Yea. Costco here in Corona only sells the flats already separated. I was reading I should make burnt ends with the point of the brisket with the extra fat in it. Hottinger’s sells them whole but can get pricey and I always spend my allowance on other stuff there.

Costco in Ontario sells prime packers at reasonable cost/lb.  Chucks are good but with a prime brisket the burnt ends melt in your mouth.

Remember to ask the butcher for the trimmings if you have them cut it up for ya.  Some will even grind the trimmings for ya.

Had a day off on Saturday. Smoked a ribeye for 30 minutes on the smoker and then seared it in a pan with butter for 2 minutes each side for lunch. 

Smoked a meatloaf for dinner. 2 1/2 half hours at 250 degreees. Found a recipe online and it was pretty good but too spicy for the family. I will cut down on the next one.

Only the best effing hot dogs ever. I was at Ralphs one day and saw them. They are their private label. https://www.ralphs.com/p/private-selection-beef-brisket-all-beef-hot-dogs/0001111000635

Smoke at 225 for an hour then turn up the heat for a little char. Holy sheeet. My wife says we are never eating another regular dog again. 2 year old is in love them as well.

Make sure to slice them a little to absorb more smoke!
