On an ATV, what is the advantage to paddles that have a 2 diagonal paddles in a V-shape, w/one leg longer than the other.

Wouldn't straight paddles work better?

 
The way it’s been explained to me since I was a kid. Straight cut for straight line performance. V cut for duning and sliding. 

 
V blade panels have better side hill stability in my experience 

 
The angle is supposed to make turning/sliding easier at the expense of straight line hook up. I'm not sure that there's that big of a difference. 

 
I've run V paddles for 20 years now.  Sand Skate's and Skate II's. 

I tried a set of Haulers last year for a weekend.  Did not like them.  They hooked really hard going straight but definitely felt a difference on turns for the worse. 

I'm sure I could have got used to them.  If you really want to drag and shoot the hill, it's an advantage.

I would argue that there is a big difference. I duned my banshee on 8 paddle haulers for many years. I was a young man then and had plenty of energy to move all over the bike to get it to turn. Lots of body english is needed to ride haulers (Straight paddle). I rode a similar banshee, Doc Chases from way back in the early days of the forum. He had sand skate IIs on and it was much easier to turn, but the back end wanted to come around and traction off the line wasn't as aggressive as the haulers.
