Looking to mate 1000hp Ford Coyote engine to S4D. Would like to stay away from the VW clutch. Anyone have info to do this properly?

I'd call Kennedy on Monday morning to see if they have an adaptor plate. If they do I'm sure they can talk to you about clutches as well.

There is no way to get away from the smaller 7.25"/8"/9" clutch package with anything other than a GM V8 engine.

Weddle now makes a billet adapter that allows the use of an Albins VW style bell housing on the S4D/S5D transaxle, which will then be used to mate to whatever non-GM V8 engine you want to use. It is essentially a VW bell housing sandwiched between 2 adapter plates. This does use the internal Weddle/Albins style hydraulic slave cylinder.

You will still need to purchase the adapter plate from Kennedy for the bell housing to the engine, and whatever clutch package you prefer.
